Chilli baked beans with crispy bacon

With a long anticipated cold snap looking like it is here to stay for a while, what better way to attract customers than with a heart warming spicy bean dish.  Exceptionally easy to make and really tasty, this recipe is bound to be a winner, both in terms of your profit margins and with your customers.

These ingredients will allow you to make 8 portions

Ingredients

2  tbsp olive oil

1 onion, finely chopped

2 cloves garlic, chopped

1 red chilli, deseeded and finley chopped

2 x 400g cans tinned tomatoes

2 x 400g cans cannellini beans, drained and rinsed

8 slices ciabatta, drizzled with olive oil

16 slices streaky bacon

2 tsp chopped thyme

1 tsp smoked paprika

Method

  • Heat the oil in a saucepan. Add the onion, garlic and chilli and cook for 2-3 minutes or until the onions have softened. Add the thyme, smoked paprika and then the tinned tomatoes and tinned cannellini beans and cook gently for a further 15 – 20 minutes (once cooked these elements can be kept for several days within the fridge and then heated as required)
  • Heat a griddle pan until hot. Fry the bacon until crisp
  • Keeping the bacon warm, add the ciabatta to the griddle pan, turning once, until the bread is griddled on both sides
  • To serve, place the griddled ciabatta onto a plate, place the beans on top and add the bacon
  • Sprinkle with some chopped thyme and serve
